The very first time that I hired Eric to cater was a high powered day for me. I was giving a business luncheon at noon and a very important business dinner at 7:00 - both at our home. I had had the pleasure of having Eric's cuisine while he was still at the Calistoga Ranch, but this was a different cup of tea.

To make a long story short, he was brilliant. Both meals were not only interesting and delicious, but the food presentation was tantalizing as well. And, perhaps best of all, Eric was great to work with. He arrived at 10:30 a.m. and put away his last knife at 11:00 the same evening. It was very clear to me from the moment he arrived that he would do a superb job and that I could totally rely on him and put my focus on other details of the events. I highly recommend Eric!

I called Eric because I wanted to give my husband a special gift for his birthday...a private cooking class.

Eric showed up at our house with all of the food and equipment that we would need. He explained the full menu that we were all going to prepare together (six of us in all), then he divided up the tasks and we began cooking. He answered questions and continued to show and explain techniques. When we finished preparing the meal we all sat down to eat with some nice wine and conversation.

Ericʼs food is a wonderful combination of Italian and California cuisine. The whole night was very relaxed and we all learned a great deal. Needless to say the dinner was fabulous.

I had the best birthday party when you personally prepared one of my favorite meals; fresh steamed lobster with all the appropriate fixings outside on our dining deck. Everything was delicious!!

We have also enjoyed many of your wonderful creations at Calistoga Ranch over the past years. We have traveled well and have enjoyed many fine dining establishments, but we must admit that we find ourselves comparing everything back to Chef Eric.
